Arti Shroff, Founder, Dolcie
Arti Shroff from Coimbatore started baking at the age of 5 with her mom and some of her friend’s moms. She was always interested in baking but as her parents were keen on her doing a science based degree she opted for architecture. After finishing B.Arch. Arti did a 2 year course with culinary academy of India which included a 6 month training with Taj Krishna in Hyderabad, part of the Taj group of Hotels.
She then started her own company by the name of Dolcie after her marriage in 2011 in Coimbatore. In the last 10 years she has seen massive changes in the homebakers industry here. Especially post covid the entire industry has just blown up and from a few hundred it has snowballed to a few thousand now.
Cakes and Weddings
Cakes have become traditional for Indian weddings now (where earlier it was mainly only for Christian weddings) now we do multi-tier cakes for engagements, weddings, receptions – everything. And usually people opt for a lot of colourful and floral cakes for these occassions usually in colours like orange yellow gold red etc. A lot fo themed cakes and cupcakes with bride and groom themed figurines and cupcake toppers have become common too. We do several such sets everything month for wedding platters. Cakes for bridal showers are also an upcoming trend in India.
Bijal Doshi, Founder of The Bake Room also a passionate cake artist and decorator.
I always had a passion for baking since my childhood and have always dreamt of having my bakery brand or an artisan cake studio. My father was always a major inspiration towards the Food industry and had been a well-wisher for my career.
I always remember the wise words of my father, Food and Garment Industry can never take a back seat as it is a basic necessity, and that was a no-turning point in my life. In the journey of 17 years, I have been aiming to create and innovate eggless delicacies.
Latest innovations in Wedding Cakes:
The white cakes and tier cakes will always be a stunning choice, but the designs and preferences are advancing. The trends in floral prints to bold colours, from art pieces to individual mini cakes there has been a massive change in the industry with a shift to minimalist and classy designs. One of the most recent trending innovations in the cake industry is creating picturesque bride and groom cakes. The cake adds a grand feeling to the wedding manifesting the journey of their happy life forever.
Dream Cake Design:
I believe that a dream cake is something more complex to express in words than to create one. But certainly, it will be grandeur, exquisite and royal with a touch of rustic and authentic true-to-life using edible ingredients. I believe that my dream cake would be a Life-Size Cake for the couple which will capture the essence of their finest moments or dream of life represented by an unreal sweet experience.

Cakes and Weddings
It’s been a decade since I have been in this industry and things have changed tremendously in respect of the kind of cakes that people want to have at their weddings or birthday parties. While the couture culture is quite old in the west, the Indian market has seen a surge in the last few years. Though India is still young, trends across the table have changed. The technicality that goes behind the cake is unimaginable.
Dream Cake Design
While we absolutely love tiered white wedding cakes with sugar flower details, there’s something appealing about the quirk of unusual wedding cake designs. Have you heard girls say that they are tired of seeing red bridal lehengas and that they will choose something different when it is their turn? Well, the same goes for the wedding cake design as well. Everyone loves floral, tiered, beautiful wedding cakes, but I want to create a life size bridal wedding gown in cake!!
